Why does a squeeze of lemon fix a dish that tasted flat? We're spending a few months on questions like that.

We're a small group working through Samin Nosrat's Salt, Fat, Acid, Heat together. It's a cookbook that argues you don't actually need recipes; that four things determine whether food tastes good, and once you understand them, you can cook without a book in front of you.

How it works. The first few sessions each take on one element. Everyone brings something to taste and compare — different kinds of salt, a few vinegars, etc — because you learn more about what acid does by tasting it instead of simply reading about it. After that we start cooking from the book and eating together, potluck style.

The details. Biweekly, evenings, about two hours. The first group is capped at 6 people so it stays a conversation rather than an event. If it fills up, you'll go on the list for the next round. We'll get together in September to meet each other and figure out a night. The cooking starts late October. You'll need a copy of the book.

Who it's for. Folks in their 20s and 30s in and around Lynn who want to get better at cooking and wouldn't mind meeting some people while they do it. Total beginners welcome!
